I'm a genuine oatmeal cookie monster... I only counted, and as of January 2018, I've shared 47 oatmeal cookie recipes along with you. Eep! Have you ever tried any of them yet? (? You'll locate all my oatmeal cookie recipes right there!) They're a few of the most popular recipes in my website because they taste really sweet and comfy, just like traditional"indulgent" oatmeal cookie recipes, but they contain no refined sugar or bread!
That means you'll begin with whole wheat bread (or gluten free, if you prefer) and prompt oats (such as these... or those for a gluten-free edition!) . Immediate oats are smaller and thinner than conventional rolled oats, and you may see them in canisters right alongside those classic oats in the grocery store.
I probably sound like a broken record by now... But because I ? you and also want your cookies to flip out totally soft and chewy, I'm reminding you ... Quantify your yogurt and bread properly, with this method or a kitchen scale! (? That is the one I have and love. A lot of either ingredient will make your cookies taste cakey or sterile, as opposed to chewy. This is particularly true of the oats--that they act like little sponges and soak up lots of moisture from the cookie dough!
Ripe bananas- ideal for baking! Really like all of @amybakeshealthy's yummy & healthful banana recipes!
See these bananas? And all those brown spots? When it comes to baking with bananas, brown = amazing! I ? extra speckly bananas because they've a lot glowing, bold flavor--and also extra sweetness! That is the minimum amount of brown that I suggest. More is better!
The remaining part of the cookie dough's sweetness comes from a different organic ingredient... Pure maple syrup (such as this!) . You would like the type that comes straight from pine trees, which is typically sold in sparse glass bottles or squat, round plastic jugs. Skip the pancake sugar and sugar!

The raisins add much more sweetness! The recently purchased, extra plump, perfectly tender ones are ideal... But for those who have elderly, somewhat dried out carbohydrates (hmm... it seems silly to explain dried fruit as dried outside! ) , that's fine!
Just add them into a microwave-safe bowland put water on top till they're fully covered. Seal plastic wrap across the top, and microwave the bowl on high for 1 second. Should you allow the peppers sit while mixing together the cookie dough, then this small hint hydrates them so they're exceptionally succulent --and that makes a huge difference in these cookies once they're baked!

Yields: 15 cookies
The familiar cozy spices and plump blueberries make these even more irresistible. They'll keep for at least one week if stored in an airtight container in the fridge --if they last that long!
1 cup (100g) instant oats (fermented if essential and quantified like this)
3/4 cup (90g) whole wheat or gluten-free* flour (measured like this)
1 1/2 tsp baking powder
1 1/2 tsp ground cinnamon
1/4 tsp salt
2 tablespoons (28g) unsalted butter or olive oil, melted and cooled slightly
1 tsp vanilla extract
1/2 cup (120mL) pure maple syrup
1/4 cup (40g) raisins
In a medium bowlwhisk together the yogurt, pasta, baking powder, cinnamon, and salt. Add the flour mixture, stirring only until incorporated. Fold in the raisins.
Preheat the oven to 325°F, plus a baking sheet with a silicone baking mat or parchment paper.
With a spoon and spatula, drop the cookie dough into 15 rounded scoops onto the prepared sheet, and flatten to the desired thickness and width using Banana Oatmeal Cookies - My Baking Addiction a spatula. Bake at 325°F for 10-12 minutes. Cool to the pan for 10 minutes before turning out onto a wire rack.
Notes: It's extremely important to quantify both the oats and flour properly using this technique or even a kitchen scale. (? clean eating cookies That's exactly the one I have and love!) Too much of either would dry from the cookies and abandon them cakey rather than chewy.
Instant oats are also known as quick-cooking or moment oats. They come in massive canisters, just like old-fashioned oats. They're not those in the small flavored loaf of bread. To create your own, add the same quantity of conservative oats to your food processor, and pulse 10-12 times or until the oats are approximately 1/4 into ? of the original size.
For the gluten-free flour, I recommend the following mix: 1/2 cup (60g) millet flour, two tablespoons (15g) tapioca flour, two tbsp (15g) brown rice bran, and 1/2 teaspoon xanthan gum. Most store-bought gluten-free flour blends (like this one!) Will also work, if quantified like this.
If your raisins are older, drier, and not so plump or juicy... Add them to a microwave-safe bowland pour water on top until they're fully coated. Seal plastic wrap over the top, and then microwave the bowl on high for 1 second. Should you allow the peppers sit mixing together the cookie dough, this little trick hydrates them so they're really soft and juicy!
